Bagogi Beef Spinach Soup

History
Our family is a huge fan of homesoups and over time we've come up with a few of own.
Ingredients
8 cups  
8 cups  
water        
1 stalk  
leak
1 cup    
frozen spinach
1 cup    
frozen squash slices  
2  tbl    
   
dried Onion (used to fry meat; added to soup after meat is cooked)  
2 tbl       
 chopped Garlic (used to fry meat; added to soup after meat is cooked) 
4 tbl      

Olive oil (used to fry meat; added to soup after meat is cooked)
2 tbl     

crushed red pepper
2  tbl    
5          
dried shitaki mushrooms         
1 tbl     
rosemary  
1 tbl     
thyme
Directions
  1. Put all ingredients in a large stock pot and bring to a low simmer. Cook until the veggies are tender.
Special Directions/Considerations 
Bagogi is a roast cut into thin slices.  There is a certain roast that is considered bagogi, however most butchers will slice any roast you ask for.
