Another one of my favorite dishes my mom used to make us. Most of my kids and Chappy love it too!
Ingredients
1 lb | ground beef |
| 2 cup | sweet corn kernels |
| 3 lg | potatoes |
| 1/4 cup | milk |
| 2 TBL | butter |
| 4 slices | American Cheese |
| Salt and pepper to taste |
I use frozen corn, though canned corn could be substituted.
Directions
- Preheat the oven to 375F.
- Cut the potatoes into 1/2""cubes. Place into a stock pot, cover with water, and bring to boil. Boil for about 15min or until the potatoes are softened.
- Meanwhile, brown the ground beef in a skillet.
- If your corn is frozen, warm in microwave or steam.
- When the potatoes are softened drain the water. Place the potatoes back into the pot and add the milk and butter. Using hand mixer, (or your prefered method), blend the potatoes until creamy.
- Layer the meat, then corn, then spread the mash potatoes on the top, in a cast iron skillet (or casserole dish). Split the cheese slices into triangles and lay atop the potatoes.
- Heat thoroughly, until the cheese is melted, in the oven.
