Waffles and Blueberry Syrup

History
James is the master waffle crafter in our family, but from time to time the rest of us get in on the act.
Ingredients
2              
eggs 
4 tsp         
1 1/2cup   
milk
1/4 tsp      

salt
6 tbl          
melted butter 
2  cups     
   
4 tsp        
1 tsp        



cinnamon
Syrup
2 cups    
Blueberries (frozen or fresh)
1/4 cups 
granulated sugar
1/4 cups 
high quality H2O (or whatever you have on hand)
Directions

  1. Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in milk, oil and egg yolks until mixture is smooth. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot.
  3. SYRUP
    1. In sauce pan place sugar, water and blueberries on high.  Bring to boil, then reduce to simmer.  Spoon over waffles.

    Special Directions/Considerations 
    The syrup as is tastes fine, but is a bit watery.  Feel free to reduce it or follow your own preferred method for syrup construction.
